If you haven't already had our BBQ, we're not your average PNW BBQ. We don't put sauce on our smoked meats. Instead, sauces are all available on the side. Those sauces are developed to reflect regional preferences, for example, our Carolina Gold is a mustard based sauce that is popular in some parts of North and South Carolina. Whereas our Texas Red State is a classic central Texas red / pepper sauce.
I'm not sure what side dishes my chef is planning to prepare, but he knocks it out of the park with cowboy baked beans, mac-n-cheese, coleslaw; you name it. We just had a service at a brewery in Woodinville. A plate from that service...
